One cocktail. We are a ramen counter, not a bar with a ramen problem.
Hōjicha is green tea roasted until it goes brown and loses most of its caffeine and all of its grassiness. Cold-brewed for six hours it comes out toasty and faintly sweet, somewhere near the smell of the barley tea in the jug next to you, and it sits on whisky without arguing with it.
Built, in this order
Ice to the top of the glass first — a full glass of ice melts more slowly than a half one, which is counterintuitive and true. Whisky over the ice. Cold hōjicha. Then the soda poured down a bar spoon so it does not knock the carbonation out. One stir, upward, once. Lemon peel expressed over the top and dropped in.
