We roast the barley ourselves on Mondays, when the bar is shut and the broth pots are going, because a dry pan is free heat and the smell gets into the room for the rest of the week. Shop-bought mugicha is fine. Ours is darker, because we take it slightly further than is sensible and stop just before it turns bitter.
Cold from May to September, hot the rest of the year, and there is no version of this where we charge you for it. A counter where water costs money is a counter that has stopped being a place to sit.
