Every chashu roll has two ends that will not slice into a clean disc. For years they went into staff dinner. Now they go into this, which is the same thing with a price on it.

The offcuts are chopped rough, spread over hot rice, brushed with tare and hit with a torch until the fat blisters and catches in two or three places. A raw yolk goes in a well in the middle. You break it and stir, and the residual heat of the rice takes the yolk from raw to barely set on the way down.

It is nine dollars because it costs us almost nothing and because a bowl of ramen and one of these is the meal we would order ourselves. If the ends have run out, they have run out — we are not going to cut into a good roll to make more.
