Five, always. Not six, because six invites sharing and these do not survive being halved.

The filling is pork shoulder minced coarse, cabbage salted and wrung out in a tea towel until it gives up a surprising amount of water, garlic chives, ginger, and nothing else. Wrappers are bought, not made — a good commercial wrapper is thinner and more consistent than anything we could roll on a counter between services, and pretending otherwise would be theatre.

The skirt

A slurry of flour, water and a drop of sesame oil goes into the pan after the sear. As the water leaves, the flour sets into a single lacy sheet that joins all five gyoza together. It comes out of the pan in one piece, gets flipped onto the plate crisp-side up, and you break it apart yourself.
